Eric, founder and owner of The Peached Tortilla, is a former litigator who left law to follow his gut. He initially took a gamble on a food truck, which led to another food truck…a brick-and-mortar restaurant, a cook book, and resounding success in Austin.
His newfound status allowed him to create dozens of jobs, start a mentorship program for novice food truck owners in Austin, and to make generous food donations from his restaurant to local schools. The secret sauce to his success? Eric was born in Tokyo, Japan and moved to Atlanta, Georgia when he was ten and his appreciation for Japanese, Chinese, and Malaysian cuisine plus traditional southern flair gives his menus a uniquely delicious spin.
